Tuesday Night Dinner

I made a hearty beef stew in the crockpot for dinner tonight.  There is something very comforting about starting dinner in the morning and not having to think about it again until time to eat.  I love cooking with my crockpot.  And the house smells wonderful all day long.



Recipe:
1lb stew beef
2 large carrots, sliced
1 large potato, peeled and cubed
1 onion, sliced
1 package of McCormick Brown Gravy Mix
1 cup water (you may need a little extra)

Mix all the ingredients in the crockpot and cook on low for six hours or high for four hours, stirring twice.

Easy and delicious!

Soup with a Side of Fries

This has to be the best black bean soup I have ever tasted.  And Charlotte loves it, too!  If you are a fan of black beans, definitely give it a try.  It's packed full of protein and lots of yummy veggies.

At the Park...

On Saturday we spent the day in Blowing Rock and Charlotte enjoyed a fun afternoon at the park.





Then we were off to visit Uncle John, Aunt Dana, and cousin Chloe.  It was a a fun day!

Autumn...

Autumn is right around the corner.  Yay!!  I bought my first Mum for the season today.  Oh, I cannot wait to buy more and visit the pumpkin patch in a few weeks.  In the South, we are always excited for this time of year as our Summers are very hot and humid.  It's like a breath of fresh air!

Homemade Pizza

I made a yummy homemade pizza for dinner tonight.  I love making my own pizza, it's really so much better than ordering out or store bought.  I always buy my pizza dough from Trader Joe's (it's the best I have found) and top it with our favorite toppings.  Tonight I used pepperoni, green pepper, a very thin layer of tomato sauce, oregano, and fresh mozzarella cheese.


Here it is fresh out of the oven.  I do not have a traditional pizza pan.  I use a baking sheet pan and it works just fine.


I served it with a mixed green salad and fresh tomatoes with a splash of olive oil and ground black pepper!  Yummy!!

Pumpkin Ale

It's September (finally) and I just discovered this delicious Pumpkin Ale!  I love seasonal brews!  The label screams Autumn with that big orange pumpkin.  It's the perfect Autumn Ale!
