Strawberry Skillet Cake

I recently pinned this recipe and decided to give it a try last night.  It was delicious, as you can tell from this photo, and so easy.  I served it with a scoop of vanilla ice cream.  I will definitely be making this the next time we have friends over for dinner.  It's a great summer dessert!

The Seat Belt Shirt...

Yes, I know it sounds silly, but that is what Charlotte calls this adorable new top my Mom gave her.  It reminds her of the seat belt in her carseat and she loves anything with little straps.  We are now on day five of wearing the seat belt shirt.  She did let me wash it on Saturday as she spilled orange juice on it and impatiently waited as it dried.  She even wants to sleep in it.  Hopefully this will pass as she has a closet full of pretty summer clothes to wear.

New Pillow Cover

I recently had this sweet pillow cover made by Paisley Handmade for Charlotte's bed.  I love it!  It coordinates with the fabric garland over her window.  It's the perfect addition to her big girl bed!

  I also ordered this fun garland for our deck for the fourth of July.

Summer Corn Chowder

I went to the Farmers Market today and picked up some fresh corn and potatoes to make this delicious chowder.  It's very easy to make.  All the fresh vegetables and herbs really make it taste like summer!  Hope you enjoy it as much as much as we do!


Summer Corn Chowder

1 tablespoon olive oil
1 tablespoon butter
1/3 cup flour
1 tablespoon chopped chives, plus extra for garnish
3 carrots, chopped
1 teaspoon fresh thyme, chopped
1 tablespoon fresh basil, chopped
3 cups chicken stock
2 large potatoes, peeled and chopped
1 cup half-and-half
1 cup corn kernels
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste

Heat oil and butter in large dutch oven.  Add carrots and chives and cook over medium heat for five minutes.  Add herbs, chicken stock, and potatoes.  Bring to a boil then reduce heat to medium-low, cook, covered, for twenty minutes or until potatoes are tender, stirring often.  Mix flour with half-and-half.  Stir in half-and-half, corn, salt and pepper.  Bring to a boil, reduce heat to low and simmer, stirring often for ten minutes.  Garnish with chives and serve.

Our Anniversary and a Lovely French Cafe...

My husband and I celebrated our 6th Anniversary last night ( our official Anniversary is today)  by enjoying a lovely French dinner at Cafe Monte!  We hired a new babysitter (which we love and so does Charlotte) so we were able to have a nice evening out.  The food was so amazing, from the wine, to the baked brie with apples appetizer, to the wonderful pan seared scallops entree, to the chocolate almond croissant for dessert.  The atmosphere was so lovely and so was the live jazz.  I enjoyed spending some alone time together just the two of us!  I felt like we were dining in France.  

Happy six years to my wonderful husband and to many more to come!!

My Two Loves!!

We spent the day in Asheville on Saturday and took Charlotte to the Nature Center to see some wildlife. It's was not as great as a zoo, but it was just fine for her age.  She really enjoyed it.  Then we were off for a short visit to Biltmore Village and on to downtown for dinner at Tupelo Honey Cafe.  I had a yummy shrimp and grits entree and my husband had a cajun catfish entree.  Miss Charlotte had a biscuit, well maybe just a few bites, and as you can see from the photo she was done and ready to move on.  It was a fun family day!  And we had the most awesome weather on Saturday.  It was great to spend the day outside.  And yes, this is the only photo I took.  I was having too much fun to pull out the camera!
