Summer Corn Chowder

I went to the Farmers Market today and picked up some fresh corn and potatoes to make this delicious chowder.  It's very easy to make.  All the fresh vegetables and herbs really make it taste like summer!  Hope you enjoy it as much as much as we do!


Summer Corn Chowder

1 tablespoon olive oil
1 tablespoon butter
1/3 cup flour
1 tablespoon chopped chives, plus extra for garnish
3 carrots, chopped
1 teaspoon fresh thyme, chopped
1 tablespoon fresh basil, chopped
3 cups chicken stock
2 large potatoes, peeled and chopped
1 cup half-and-half
1 cup corn kernels
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste

Heat oil and butter in large dutch oven.  Add carrots and chives and cook over medium heat for five minutes.  Add herbs, chicken stock, and potatoes.  Bring to a boil then reduce heat to medium-low, cook, covered, for twenty minutes or until potatoes are tender, stirring often.  Mix flour with half-and-half.  Stir in half-and-half, corn, salt and pepper.  Bring to a boil, reduce heat to low and simmer, stirring often for ten minutes.  Garnish with chives and serve.

  3. Oh yum that sounds delicious. I will have a go at this. I think of soups as winter food so it's nice to know a recipe for a summery soup. (anyway it's so cold here I quite fancy soup!) x
