Happy June 1st! It's hard to believe May (my favorite month) has come and gone. That was quick! May was a great month filled with lots of goodness. I am thankful!
So I've been remembering to pull out my camera more often and snap photos of my cooking. I made a delicious lemon linguini with zucchini & basil for dinner last night. It all came together well under an hour and everyone loved it. It tasted like summer to me. I served it with a toasted baguette that I topped with olive oil. I would definitely make it again. I also picked up a gorgeous bunch of rainbow swiss chard from the farmers market on Wednesday that I sauteed in olive oil, garlic, salt, and pepper. It was perfect alongside grilled salmon. Everything is so fresh at the farmers market and meals are just easier this time of year. What have you been cooking/baking lately?
Well, I need to get busy packing as we are leaving for vacation soon. Happy summer!
We're eating much lighter meals at the moment. Although I love comfort food like stews and casseroles, they're things we eat during the colder months. Linguini sounds perfect for this time of year with delicious summer ingredients. Enjoy your vacation.

I make my own vegan pesto and freeze cubes of it so I have it to eat all winter long (and also to add to soups). It tastes great on linguine.

Thank you! The embroidery is by my daughter, Charlotte. She's currently working on a new one called "Summer Dream" from Juliasbrodeire.com. We have purchased three kits from her so far. Her designs are beautiful! and the quality is exceptional. Charlotte really got into embroidery last summer and has loved it ever since. I'll be sure to post pictures when she completes the next one. And yes - freezing pesto cubes is a wonderful idea!

You asked on my FFF post what brand of peach iced tea I like: I've only found one brand that doesn't have a TON of sugar and that's the bottled lipton. usually I make my own cold brew iced tea with no sweeteners. sometimes i do squirt a drizzle of honey in it.
the roses I grow are tea roses so the scent is light and delicate, not cloying like the ones you see that are long stemmed and in funeral services.
